THE HOME ECONOMICS EXTENSION COURSE IN FOODS This course comprises sixteen lessons and is designed to cover approximately eight months with one theoretical and practical lesson every two weeks. The course may be carried on in connection with the public schools, through local clubs or by individual girls. Club membership is limited to girls between 10 and 20 years of age. Application blanks will be furnished on request. When the application is approved, a Club Membership Card will be given and, when the course is completed, a Certificate Card will be issued. All club members may participate in bread, cake and other cooking contests held at the state and county fairs or otherwise. Sixteen Lessons on Foods: These lessons will cover to some extent the history, production, physics and chemistry of foods in connection with the practice of food preparation and cooking. They are divided as follows: The above lessons will be issued from time to time in bulletin form as required for the Girls Home Economics Clubs.
